The new Nordic cuisine, famous for its pureness, is the food trend. Pure! visited Gothenburg and enjoyed its charming and relaxed atmosphere. Its compact city center, built around the canals is great for a citytrip, everything is within walking distance. The demand for organic food in Sweden is growing fast. In 2013 only 3% of the food produced in Sweden was organic, this doubled to 6% in 2014. Environmental issues, local produce and animal welfare are important as it comes to food and compared to most countries, a focus on sustainability comes more naturally to Sweden.
Exploring the beautiful green capital Stockholm was on the program as well. My visit coincided with the prestigious Bocuse d’Or international culinary competition. The top three of the competition? Norway was third, Denmark second, and Sweden was the winner!
