In Midden-Delfland, the green countryside wedged between big cities like Rotterdam, Delft and the Hague, Indigo serves coffee, lunch, drinks and dinner. They serve classic dishes like apple pie, beef stew and Dutch hotchpot, and all of them are made with organic ingredients. The dairy, vegetables and meat are sourced locally. Even the ice cream is produced by a local farm.
Indigo dishes are also seasonal. This means kale, Brussels sprouts and carrot in winter, field peas, beans and soft fruit in summer. From the field to the plate, pure, uncomplicated, rounded flavours that support the local economy. Dinner is served at half past six, costs € 12,50 per person, anyone can join in at the long table but a reservation is required.
